Every year we receive our cabbage harvest, then let the microbes do their thing.

Our sauerkrauts and kimchis are fermented for a minimum of 8 weeks, with some batches aging for 4 months or more.

Our chillies ferment for anywhere from 9 months to over 3 years, developing depth, complexity and heat along the way.
