Just in time for the World Goat Cheese day on Saturday.

Stone and Crow - Amiel

Stone and Crow Amiel is an ash white soft goat’s milk cheese from Victoria’s Yarra Valley made from non-animal rennet so it is vegetarian friendly. It’s individual, as are all cheeses produced by Stone and Crow – they seem to pride themselves on the point. It’s very attractive to look at due to the stripes of ash on the doughnut shaped rind. As a result of this is will look wonderful on any cheese platter.

It has a even soft consistency in the paste, and is at the firmer end of the spectrum relative to other soft cheeses. The flavours have a pleasing vegetal and chalky flavours nature in the foreground, with some savoury animal flavour present too. The flavour has nice medium complexity and length. As a result they add to the pleasure from the textures and visual effect of the cheese.

Vully Rouge -
An exquisite semi-hard cheese, perfect for every occasion, whether it’s breakfast, brunch, supper or a simple snack; in a sandwich or on the cheese board for dessert. With its soft, delicate texture, its colour ranging from ivory to pale yellow and its mild and pure, slightly piquant flavour, this original cheese is always a hit.

Vully Rouge is made at a small dairy which is located by the lake of Morat in the canton of Fribourg. At the end of production, the cheese is soaked in brine for 24 hours before being regularly washed with brine and Pinot Noir which is grown on the slopes of Mont Vully.
