Time is money, baby! Did you know sausages hang for 24 hours before they hit the counter?

Somewhere along the way, sausages became the cheap option. Makes you wonder where the corners are being cut.

Good food takes time. Good ingredients cost money.

Cuts that deserve more attention!

Lamb chump chops 🐑 come from the rump end of the lamb. They’re meaty, tender and full of flavour — perfect on the BBQ or in a hot pan. Joe’s go to for the barbie.

Pork neck 🐷 is part of the shoulder and has plenty of beautiful intramuscular fat. Juicy, forgiving and very hard to stuff up. Roast it, braise it, slice it into steaks or cook it low and slow. Joes’s go to for schnitzel.

Chicken cutlets 🐔 are essentially chicken thigh in its original form — skin on, bone in. The bone adds flavour, the skin gets crispy and the thigh stays juicy. Simple. Joe’s go to for curry.

Ask your butcher what’s underrated. We’ve got opinions.

3 years! 🔪
A lot of meat, a lot of early mornings, a few questionable decisions and now a baby thrown into the mix.
Thank you to our incredible staff and to everyone who has walked through our doors, shopped with us, recommended us and kept our little shop going.
3 bloody good years!
