nutraorganics Thai Beef Curry
The kind of slowcooked comfort food that makes the whole house smell incredible. Rich coconut curry, tender beef and plenty of warming flavour, finished with fresh lime, herbs and chilli.
Ingredients:
• 800g beef chuck steak
• 1 onion, chopped
• 2 cloves garlic, minced
• 3 tbsp red Thai curry paste
• 2 x 400ml cans coconut milk
• 1 tsp turmeric powder
• 2 tbsp peanut butter
• 3 tbsp Beef Bone Broth Concentrate Native Herbs
• 1 cup water
• 1 lime, juiced
• 2 cups jasmine rice
To serve:
• Fresh coriander
• Spring onions
• Red chilli
• Greek yoghurt (optional)
Method:
1. Heat oil in a large pot and brown beef in batches. Remove and set aside.
2. In the same pot, cook onion until soft. Add garlic and curry paste and cook for 1 minute.
3. Add coconut milk, turmeric, peanut butter and nutraorganics Beef Bone Broth Concentrate. Bring to a simmer.
4. Return beef to the pot, cover and simmer gently for 2.5 hours, stirring every so often. Add water if needed.
5. Once the beef is tender, stir through lime juice.
6. Serve over jasmine rice and top with coriander, spring onions and chilli.
