Double tap if going gluten free wasn’t a choice for you. For most of us, it wasn’t. You either go gluten free or continue to suffer invisibly. It’s a real thing people struggle with - others can’t see you outwardly suffering, so they assume you mustn't be... problems.
It could be easy to be bitter about feeling so restricted. But the way I look at it is, there is always an alternative. Just because the ingredients change, doesn’t mean the menu has to. And with healthier GF alternatives, I can control and eliminate the symptoms I struggled with for YEARS before eliminating gluten + wheat from my diet.
I’m fortunate enough I no longer crave wheat based breads, cookies, cakes, muffins, wraps and so on. But it brings me great joy to create healthy GF versions of these foods for my significant other, myself and when I cook for others, so we don’t feel as though we’re missing out on these yummy foods.
The trouble is, mixing gluten free flour is very tricky and can be frustrating. This is because different proportions of gluten free whole grains are required depending on whether you are making cookies and muffins or bread and pizza crust.

To me there is something so powerful about knowing how impactful eating gluten free + using food as medicine is, in regards to my health (is it just me?).
