Today we’re celebrating the mighty sardine — small, sustainable, and absolutely packed with flavour. From Portugal to Spain to Italy, sardines have been a pantry staple for generations, and the craft of canning them has become an art form.

A little history for the day: canning was first developed in France in the early 1800s as a way to safely preserve food for long periods — a breakthrough that quickly transformed coastal economies. As the technique spread, it travelled down through Spain and into Portugal, where sardine canneries blossomed and families refined their own artisan methods. That’s why so many of the world’s most beloved tins still come from those Atlantic shores.
