🌟My Top Ten Lunchbox Recipes🌟
With preschool back tomorrow I got into a bit of lunchbox baking today.
Pizza bianca, anzac slice, blueberry mini-muffins and a batch of my 2kg yoghurt 🙌
When we do groceries I skip the lunchbox foods aisle completely thanks to my thermies on the bench. That definitely adds up to big savings on our food bill! How much could you save each week by not buying kids snacks or yoghurts?
The recipes I made today are all on regular rotation in my kitchen. That got me thinking about lunchboxes and the other recipes that I make a lot. These ones here would be my top ten lunchbox recipes:
1. Pizza bianca - I leave off the garlic and rosemary. Chop into serving size pieces once cool and freeze in a single layer before storing in a bag in the freezer. Or make into mini pizzas with some tomato sauce, cheese and pineapple.
2. Anzac slice - see the recipe tips for time to bake to give a different texture. For oaty bar style, bake for 15-20 mins at 160C. I add 2-3T cocoa powder and a scoop of chocolate chips and cut the sugar down to about 80g.
3. Blueberry mini muffins - I stick the blueberries on top before baking instead of mixing through. Mini size are good for portion control.
4. Oatmeal raisin cookies - my kids don't like raisins in cookies so I swap for chocolate chips. Hide them in a container in the freezer.
5. Black bean brownies - I use cocoa powder instead of chocolate. No one knows there's beans in them!
6. Yoghurt - a staple for lunchboxes! I make 2kg at a time, serve into little containers with some fruit topping or a little bit of jam. A couple of frozen blueberries in there helps keep cool in summer.
7. Better banana cake - I usually don't ice it, cut into slices once cool and freeze in a container. Also great as muffins with maybe 100g chocolate chips through the mixture.
8. Chocolate chip cookies - these are pretty sweet so I don't make these often for lunches, usually save them for birthday parties. These also freeze really well.
9. Classic pancakes - these go great as pikelets. One of my OG lunchbox foods, another good one for the freezer. Delish dipped into yoghurt.
10. Portguese bread - I make these into rolls and freeze them too. The kids absolutely love them!
