Fancy an easy dinner this week? Try our Thai Beef Curry recipe.

Try this low effort Slow Cooker Thai Beef Curry recipe - Just set and forget!

Ingredients:
1.35kg boneless beef chuck roast, diced
50g red curry paste
350g coconut milk
120g peanut butter
2 tbsp soy sauce
190ml beef stock
2 tbsp honey
125g sugar snap peas, trimmed
1 red chilli, sliced
2 tsp fresh ginger, minced
1 tsp salt
1 tsp pepper
Optional: fresh coriander or basil

Instructions:
Season the beef with salt and pepper, then transfer it to a slow cooker along with the red chilli slices.

In a medium bowl, whisk together the red curry paste, peanut butter, coconut milk, honey, soy sauce, beef stock, and ginger. Pour this mixture over the beef in the slow cooker.

Cover and cook on low for 7-8 hours, until the meat is tender.

Stir in the sugar snap peas. Cover and cook on low for an additional 40-60 minutes, until the peas are crisp-tender.

Garnish with fresh coriander or basil just before serving.

Back to school just got easier with these Quiche Cups! 🥚🧀 Perfect for making ahead and freezing, these muffin quiches are a convenient, grab-and-go option for busy mornings or lunches. Plus, you can customise them with your favourite fillings – a sneaky way to hide veggies for the kids!

Ingredients:
6 large eggs
1/2 cup milk
1/2 cup cheese
1/2 cup cooked ham, bacon, or veggies (like spinach or mushrooms)
Salt and pepper to taste
6 muffin tin liners (optional, for easy cleanup)

Instructions:
Preheat oven to 180°C and line a muffin tin with liners.

Whisk eggs, milk, salt, and pepper together in a bowl. Stir in cheese and cooked ham, bacon, or veggies.

Pour the egg mixture evenly into each muffin tin, filling about 3/4 of the way.

Bake for 15-20 minutes or until quiches are set and lightly golden on top. Test with a toothpick – it should come out clean.

Allow the muffin quiches to cool slightly before serving. For freezing, ensure they are fully cooled before storing.
