INGREDIENTS;

1kg Middle Bacon Rashes
750g Premium Beef Mince
10 Hard Boiled Eggs
Grated Tasty Cheese
Parmesan Cheese
Herbs

This recipe will make a Carnivore Sushie approximately 40-45cm long so adjust quantities to your individual size preference

- Lay 2 sheets of aluminium foil out on a flat surface, enough to completely cover the sushi when rolled

- Place your bacon rashes in a single layer on the aluminium vertically leaving enough foil on the outside of the layer for rolling into the sushi roll.

- Take your mince and add whatever herbs and spices to your liking (garlic, salt and pepper are always my go to but anything can be added) and mix well.

- Evenly spread your mince mix over the layer of bacon so that it is completely covered.

- Sprinkle your cheeses evenly over the mince in a thin layer.

- Next lay your Boiled Eggs horizontally on top of the meat, cheese and bacon. I find laying them closer to the outside top or bottom edge makes it easier to roll.

- Now the tricky part, rolling it into a roll. Generally I take the side that has the eggs first as they can be tricky to roll last. Try to roll it as tightly as possible and make sure the foil completely covers it (don't forget to tuck the ends in).

- Place on a large baking tray and pop in the oven on 200-220 degrees for 1 hour.

- Once cooked, unwrap & serve. If you want crispy bacon on the outside, remove the foil in the last 15 minutes of cooking.

We are excited to announce that we will now be offering home delivery to our customers.

To Kyabram & those that live with 5km of the shop, delivery will be free Monday-Friday.

For those living outside this radius, delivery will be on Wednesdays & Thursdays with orders needing to be placed by Tuesday night.
Delivery fees will be $5 for orders up to 20km from the shop (Tongala, Wyuna, Undera, Gillieston, Merrigum, Girgarre, etc).
For orders past the 20km from the shop, $10 delivery fee will be charged (Rochester, Echuca, Nathalia, Shepparton, Tatura, Stanhope, etc).

To order just follow these simple steps;

1. View our list of products (attached to this post) and make your selection. If there is something your wanting that's not on the list, please ask our friendly staff when you call.

2. Call Kyabram's Main Street Butchery on 58532123 and place your order along with your contact number and address.

3. Pay for your order over the phone.

4. We will let you know when we can deliver your order

New owners Kieron Eddy & Melissa Eddy with our family (Rhiann, Jaxon & Hayden) along with our amazing butcher Brenton Northausen, have now had Kyabram's Main Street Butchery open since February 2026.
Kieron is the star of our reels, showcasing his humour along with Rhiann (aka Sparkle Farts), Jaxon (aka Tank) & Hayden (aka Squeek) as his assistants. Melissa is known as the "Minister for war & finances" working hard behind the scenes. Brenton (aka Northy) has a reputation as being one of the best butchers in the region, showcasing his amazing talents in our shop.
