You’re 100% correct - and it’s nothing but the very best!
Mould and cheese have a long and delicious relationship. We all recognise the distinctive veins of blue cheese, but mould also plays an important role in ripening many other cheeses.
Cambray Cheese 's Mount Folly is a surface-ripened white mould cheese with a wonderfully soft, mousse-like texture that melts in your mouth.
Then there’s Ashdown. Its darker appearance can sometimes be mistaken for blue mould, but it’s actually a variation of the Mount Folly rolled in a fine layer of ash, adding subtle earthy notes while the edges become beautifully soft and creamy.
So yes… there’s mould in our fridge - and we’re rather proud of it! 😄🧀
