“Tocino” means bacon in Spanish. In the Philippines, it became a popular sweet and savoury cured meat enjoyed any time of the day, especially for breakfast. It is commonly served with fried rice, egg, atchara (pickled papaya), and vinegar dipping sauce.

The Philippines was under Spanish colonisation for more than 300 years. During that time, meat-curing methods were introduced as a way to preserve food before refrigeration existed. People relied on smoking, drying, salting, fermenting, and curing to keep meat fresh.

Over the years, Filipino tocino evolved through local creativity and innovation, becoming the flavourful dish loved today.

Longganisa is basically the Filipino version of a snag, with heaps of regional varieties across the Philippines’ 7,000+ islands.
There are two main styles:

De Jamonada – sweet
De Recado – savoury

Think of it as a multiverse of sausages — every region has its own flavour and character based on local ingredients.

The cooking method is usually the same: simmer the sausages in a little water until cooked through and the water evaporates, then let them fry in their own fat (or add a bit of oil) until nicely caramelised.

They’re commonly eaten as an all-day breakfast with garlic fried rice, egg, atchara (pickled papaya), and vinegar for dipping.

This is very common is every “karinderya” (food stalls) in the Philippines. It’s garlicky, savoury and umami. This here will transport you to the Philippines in one bite. So if you cant afford the ticket right now this here will do.

This Vigan Empanada recipe features Sarimanok Longganisa de Recado VIGAN style and a crispy rice flour wrapper filled with grated green papaya, egg, and longganisa. It is designed to be deep-fried until bright orange, served hot with Ilocos vinegar.

Ingredients

Dough

2 cups Rice Flour (or ordinary rice flour mixed with 2 tbsp glutinous rice flour)
1 cup Hot Water (approximately)
2 tbsp Annatto Oil (achueute oil)
1 tsp Salt

Filling

4-6 pcs Sarimanok Longganisa de Recado Vigan STYLE (casing removed, meat crumbled and pre-cooked)
2 cups Green Papaya (grated, squeezed dry)
4-6 raw Eggs
1 cup Mung Bean Sprouts (optional)
Cooking Oil for frying

Instructions

Prepare the Filling: Sauté or fry the Sarimanok Longganisa until cooked and crumbled; set aside. Grate the green papaya and squeeze out all excess moisture to avoid soggy dough.

Make the Dough: In a bowl, combine rice flour and salt. Add annatto oil and hot water gradually while mixing. Knead until smooth, pliable, and non-sticky.

Divide and Flatten: Divide the dough into 4-6 golf-ball-sized portions. Place one ball between two layers of plastic wrapper or wax paper and flatten into a thin 6-inch circle using a rolling pin.

Assemble: On one half of the dough circle, place a thin layer of grated papaya. Top with crumbled Sarimanok Longganisa, then crack one egg in the center. (Add mung bean sprouts if you want)

Fold and Seal: Carefully fold the other half of the dough over the filling to create a half-moon shape. Seal the edges by pressing firmly or using a small plate to crimp/trim the edges.

Fry: Deep-fry in 180°C (350°F) hot oil for 3-5 minutes, or until the wrapper is crispy and brightly orange.

Serve: Drain on paper towels and serve immediately with spiced Ilocos vinegar.
