Myojin Gyuto 240mm, made in SG2 stainless steel.

A stunning example of some of the highest craftsmanship in Japan.

Trained by the legendary Morihiro-san, Naohito Myojin has carved his own path by creating his own workshop and releasing the highly coveted Tetsujin range with blacksmith Toru Tamura.

In this line, Myojin utilises a fine grain powdered steel called SG2 (r2) for superior edge retention and sharpness - it’s also stainless, for easier maintenance!

We are so lucky to have these, and a huge thank you to our partner in Sakai !

Wow! Another year! Thank you all so much for the incredible support you’ve shown us this year! We have a couple more days to go with typical closures on Christmas Day and Boxing Day, but regular hours otherwise.

Today is a bittersweet day - our dear Sachi is finally leaving the nest to start her new life as a pathologist. Most people don’t know, but Sachi used to be a midwife in Japan!

Sachi came to us when we first opened during the COVID lockdowns - we had to do the job interview over ZOOM!

In her first week, she revealed to me that she moved to Melbourne to be with her Aussie boyfriend…little did I know, her boyfriend turned out be my high school friend - small world!!

While this shop will never be the same without you, I am so happy that you gave us an amazing 5 years! We love you Sachi!!!!

3: Snake eye sake glass. The blue and white circles are used in competition to determine the colour and clarity of the sake, while the tulip shape highlights the aroma. Perfect.

4: Be the legend that walks into the Christmas party with a giant magnum! This Kinoene Honjozo has a classic profile that isn’t too sweet nor too dry. A perfect all-rounder that everyone can enjoy! 1.8L FTW!

A few faves that we would LOVE to receive as gifts!

1: gift box! A killer chilli oil with deep roasted notes and a delayed spicy kick! And then a super tangy and refreshing spring onion oil that pairs so well with fish and chicken!

2: Small sized hibachi from Japan…we love this variety because it is coated in steel to make for easy cleaning.

3: awesome cookbook! If you’re a regular at Good Food and Broadsheet, you will have no doubt read his work. Filled with easy to follow classic recipes, this is a must have for all fans of Asian cooking!

4: classic chilli oil. Our best selling chilli oil and for good reason - packed with umami and super crispy. We will always have this.

5: New addition Ramen Hayato special pack! These are incredibly hard to come by - 3 servings of their legendary miso ramen with fresh noodles! You won’t have to line up for 2 hours to get a taste!

Footscray is filled with Pho shops - many of which allow BYO! It’s a no-brainer to pair Sake with rice dishes. Why not have a drink made of rice with your rice dish?

While most sake pairs deliciously well with Pho, we think we have found the perfect pairing.

Brewed in Nagano from certified organic rice, this beautiful sake has a wonderful aroma of toasted rice and a rich palate of chestnuts, dried figs and soy milk - unusual I know…but it works, especially with beef pho!
