Angus outside skirt is a premium cut of beef, prized for its intense beefy flavour, good marbling, and tenderness. It has a deep, robust beef flavour due to its working-muscle nature and marbling.

Pics here show sliced cooked Angus outside skirt steak, known in Cantonese as 崩沙腩 (bēng shā nǎn).

The image shows thin slices of the outer diaphragm muscle, with its signature coarse, open grain and wavy texture visible. 崩沙腩 is a popular Hong Kong/Chinese term for this cut (from the cow’s 横膈膜). It’s prized for being more tender and flavourful than regular brisket.
