Australian and New Zealand Seafood. What is your stand-out/favourite item you sell? My favourite items that I sell are those special restaurant quality cuts that differentiates us from the other market stalls. i.e skinless boneless Hapuka, Blue eye , Tassie Trumpeter etc.. that you would expect at a high end restaurant. I also specialise in Huon Salmon products including fresh, pin boned Tasmanian atlantic salmon fillets, smoked salmon and Caviar. How long have you been trading at the Market? I emigrated from New Zealand and started in the market in 1989 working as a filleter. I bought a share in my current business in 1995 and have been the sole owner for the past two years. What do you love most about market life? As well as a huge range of Australian wild caught prawns both cooked and raw and fresh Bass Strait scallops. I also specialise in Southern Rock Lobster over the summer months and especially for the christmas market. As a creative stallholder at the Market, where do you get your inspiration from? My inspiration is in giving the customers advice on what to buy and how to cook a restaurant quality meal at home. I love the diversity of the customers who come from every corner of the globe. As a person who likes to be busy the market is a perfect fit. I have fantastic staff who also love the market and take great pride in their work . Positive feedback from customers is what makes it all worth while. Where are your favourite places to shop at the Market? I like to shop at Sylvia’s Deli. I have my daily coffee break at Coffea coffee merchants and every morning I look forward to my waiting coffee from Ren’s Cafe when I return from the wholesale fish market in the morning at 5.30am.
