The Art of Pork: Half Pig Breakdown Masterclass with Costante Imports x Joe’s Quality Corner 🇮🇹

Quality Partnerships are so rare to find and that’s exactly what our collaboration with Costante Imports is… 2 Italo-Australian Institutions bringing Italian Culture, Quality Produce, Good Food and Internationally renowned equipment to the masses. Tonight Frank broke down half a pig from snout to tail, identifying each cut of pork while exploring the specific techniques and preparation methods required for turning each cut into Salumi.

This class gave a fantastic overview of the concept of curing whole cuts of meat and breaking down and utilising the whole animal, specifically teaching to process of making:

Capocollo
Prosciutto
Culatello
Lonza
Pancetta (flat and rolled)
Sausages
