A perfectly cooked steak can still turn out dry if you don't let it rest long enough.
Heat tightens the muscle fibres and pushes moisture towards the centre. Resting gives that moisture time to redistribute before the knife goes in.
Here's a quick guide:
✓ Steak: about 5 minutes
✓ Thick cut: about 10 minutes
✓ Roast: 15–20 minutes, loosely covered
