Soup season is officially open! ๐ฒ๐ And what better way to kick things off than with this colourful Pea & Ham Soup ๐ฎโ๐จ Imagine coming home from work and sitting down to a bowl of this. Puff! All your problems disappear ๐
๐ INGREDIENTS:

200g D'Orsogna Natural Leg Ham Portion 700g (No Artificial Nitrite)

2 slices of white sandwich bread
โ
1 tbsp olive oil
โ
1 tsp dried oregano
โ
1 tbsp butter
โ
1 onion, diced
โ
1 celery stalk, diced
โ
1 carrot, diced
โ
Salt and pepper
โ
750ml chicken or vegetable stock
โ
500g frozen peas
โ
2 handfuls spinach
๐ฉโ๐ณ STEP BY STEP:
1๏ธโฃ Brush the sandwich bread with olive oil, sprinkle over the oregano, cut into cubes and air fry until golden and crispy.
2๏ธโฃ Cut the Natural Leg Ham into small cubes.
3๏ธโฃ Melt the butter in a pot, add the ham and cook until golden and crispy, then set aside.
4๏ธโฃ Dice the onion, celery and carrot and add them to the same pot. Cook until softened.
5๏ธโฃ Pour in your favourite stock and bring to a gentle simmer.
6๏ธโฃ Add the peas and spinach and cook just long enough to keep their vibrant green colour.
7๏ธโฃ Blend until smooth and silky.
8๏ธโฃ Stir through most of the crispy ham.
9๏ธโฃ Serve with the croutons and the remaining ham on top.
