Wake Up to Waffles’ pancakes are protein packed, fluffy & have just the right amount of sweetness!
1/2 cup almond milk
1 & 1/2 tbsp ground flaxseed
2 tbsp pure maple syrup
1/4 cup h**p protein powder
1/4 cup oat flour
1/4 tsp baking powder
Pinch of salt
1 tbsp coconut oil, melted
1. In a medium bowl, whisk together almond milk, flaxseed, and maple syrup.
2. Stir in protein powder.
3. Stir in oat flour, baking powder and salt until there are no clumps.
4. Melt coconut oil and pour into batter.
5. Heat some oil in a medium pan over medium-low heat.
6. Pour 1/4 – 1/3 cup batter into pan.
7. When bubbles start to form in the centre of the batter, flip pancake.
8. Once other side is cooked through (should only take 20-30 seconds), the pancake is ready. Add to a plate & repeat step with remaining batter.
9. Serve with desired toppings. Melted dark chocolate and fruit are delicious.
