Filet mignons... what's the best way to cook them? A question often asked over the counter here at the butchery. The best method is following a few simple steps and using many people's favourite home appliance... the air fryer ๐ฅฉ Air frying your steak may seem like a weird option at first, but hear us out. Your bacon will go nice and crispy for extra flavour, also baking on a tray in the oven often means the bottom of your steak will braise and stew in its own juices, giving it a slight chew. This is not a problem in the air fryer. Eye fillet, like all steaks, is full of moisture. Pan searing suits cuts like porterhouse or scotch, but filet mignon is more of a cube shaped steak. What happens in the air fryer is the outside blast of circular heat pushes those juices towards the middle of your steak, exactly where you want them to be ๐ Our reccomendations for a juicy tender mignon as pictured is to leave it on your kitchen bench for an hour before cooking. This brings up the temperature of your steak before the outside heat is added, resulting in a more evenly cooked steak๐คค Air fry at 180c for 12-15 minutes, let rest for 5 minutes before serving. Always handy to have a temperature probe, aim for your steak to be between 50-52c before resting. If your mignon is fridge cold before going into the air fryer, you may want to aim for closer to 25 minutes. Always check after ten minutes and if the top is cooking quicker than you'd like, simply fold some alfoil over the top ๐ Do not wrap your steaks in alfoil, it brings the whole braising and stewing thing back into the equation. Do not wrap in foil for the resting time either, the mignon will start to steam itself. Simply drape with a tea towel instead. Serve with your favourite veg or salads and enjoy your prime quality steak at its peak ๐ฝ๏ธ Always good with cheesy garlic bread from our heat and eat fridge ๐
