Craving something warm and hearty? Give this baked Japanese fusion favourite a try: Meat Sauce & Eggplant Doria π§
Our take on the beloved Japanese-Western comfort dish, this Doria recipe combines savoury meat sauce, tender eggplant, fluffy rice and a golden layer of melted cheese. A touch of Kikkoman Soy Sauce adds extra depth of flavour, making every bite rich and satisfying π€
π©βπ³ Method
1. Slice the eggplants into 4 mm rounds and pat dry with paper towel.
2. Heat the vegetable oil in a frying pan and cook the eggplant on both sides until lightly browned. Remove and set aside.
3. Add the butter to the pan and cook the beef mince through. Then return the eggplant to the pan, along with the canned tomatoes, bouillon cube and bay leaf.
4. Bring to a simmer, then reduce the heat to low and cook for a further 7β8 minutes, stirring occasionally and skimming any excess foam from the surface. Stir through the soy sauce, sugar, salt and white pepper.
5. Place the cooked rice into a casserole dish or oven-safe baking dish. Spoon over the meat sauce mixture and top evenly with shredded cheese.
6. Cover loosely with aluminium foil and bake in a toaster oven or oven for 6β8 minutes, until the cheese is melted and golden.
TIP: Remove the foil for the last couple of minutes of grilling for an extra crispy, golden top π§β¨
