Ingredients (serves 2–3)
* 4 eggs
* 1 small onion, finely sliced
* 2 cups baby spinach
* ½ cup cream
* ¼ cup grated parmesan
* 1 tbsp butter or olive oil
* Salt & cracked pepper
* Pinch chilli flakes (optional)
* Fresh herbs to serve
* Thick sourdough or toast on the side
Method
1. Sauté onion and garlic in butter until soft.
2. Add spinach and cook until wilted.
3. Stir through cream and parmesan.
4. Crack in eggs and bake at 180°C until set.
5. Serve with warm sourdough
