Fresh Eggplant & Juicy Tomatoes In Store Now!

Cร Tรญm Sแปt Cร Chua (Vietnamese Braised Eggplant with Tomato)
โจ Easy & comforting:
Ingredients:
โข2-3 eggplants (cut into cubes)
โข 3 ripe tomatoes (cut into cubes)
โข2 cloves garlic (minced)
โข1 tsp sugar
โข1/2 tsp pepper
โข Fish sauce
โขSpring onion & Coriander
โขOptional: Minced pork or tofu
How to cook:
1. Lightly pan fry eggplant with some oil until soft and slightly golden. Set aside once done.
2. Sautรฉ garlic until golden and full of fragrant.
3. Add tomatoes and cook until soft and saucy.
4. Stir in fish sauce, sugar & pepper (season to taste)
5. Add eggplant back in and simmer 7-10 minutes
6. Top with spring onion & coriander.
If use MINCED PORK added pork in before step 3 (added minced pork and cook until browned and fully cooked)
If use TOFU (firm tofu) added in after step 4. (Stir gently not to break the tofu)
Option 1- lightly pan fry tofu first until golden brown (best texture)
Option 2- Add directly into tomato sauce if you want soft texture.
Serve with hot jasmine rice ๐ simple, healthy and full of flavour
