Slow-Roasted Pork Belly with Crispy Crackling 🥩 One for the weekend — ask our butcher team for a piece this week.

Serves 4 · 3.5 hrs low & slow

You’ll need:
1.2–1.5kg pork belly, skin scored
2 tsp sea salt flakes
1 tsp fennel seeds, crushed
1 tsp garlic powder
1 tsp black pepper
Olive oil
500ml chicken stock
4 sprigs fresh thyme

Method:
1. Pat pork belly completely dry — this is the key to great crackling. Score the skin deeply in 1cm intervals.
2. Rub the skin generously with sea salt, pressing it into the scores. Mix fennel seeds, garlic powder and pepper and rub into the underside of the meat.
3. Place skin-side up in a roasting tray. Pour stock and thyme around the base. Roast uncovered at 150°C for 3 hours.
4. Increase heat to 230°C and roast for a further 25–30 minutes until the crackling is golden, blistered and crisp.
5. Rest for 15 minutes before slicing. Serve with roasted vegetables and pan juices.

💡 Tip: The drier the skin before it goes in the oven, the better the crackling. Leave it uncovered in the fridge overnight if you can.
