Last week I had the honour of judging cheese at Sydney Royal as part of

Over two days we assessed, sniffed, touched & most importantly tasted excellent dairy produce from all over Australia.

I had panels made up of sensory experts, cheesemongers, cheese industry & beverage industry & we were assisted in our judging by a team of stewards and officials who made the whole process run very smoothly.

Very much looking forward to the winners being announced at tonight’s awards ceremony.

Our newest team member & absolute gun Kaitlyn has made her Cheesemas (and beyond) choices:

“Milawa Aged Blue I really love having it with muscatels and a fresh baguette, it is all about the texture and the salty, savoury richness. And for something a bit luscious I have chosen Delice de Saint Cyr, a creamy and grassy bloomy rind and good contrast to the umami bomb of the Aged Blue”

“Sentimentality for me this Cheesemas! Whenever I’m missing a taste of my home in rural country Victoria, I turn to Long Paddock’s Banksia for comfort - a nutty honeyed macadamia hug with a balanced tinge of bitterness. Perfect eaten with your feet up with an end of year Negroni!

In preparation for judging I attended a sensory training class run by Doctor Philippe Dumain, the sensory scientist from the Ecole du Fromage Savencia.

A great opportunity to refresh and build on the study I’ve already undertaken before judging the next day. Thank you for organising.

I’ve been judging Australian cheese for 14+ years & it was very interesting to have cheeses from all over the world in front of me on the table to evaluate.
