Some of the steps we take & to ensure this incredible fish is a memory burning experience for our guests

1. SUKIBIKI - The ambition of this technique is to cut the scales (Not Skin) off the fish along with the membrane that holds the scale in place.
This gives us the ability of removing all surface moisture off the fish which then means we can condition the skin directly through dry ageing

2. DRY AGEING - The sweet spot for Coral Trout depending on a list of different factors is usually day 4. At this stage the fish has lost approximately 8% moisture, the level of savouriness in the flesh of the fish has increased and the skin has a light tack making it perfect for grilling. The longer you age this fish the less special it is. It is so important to not wash this fish or any fish when processing as it will accelerate bacteria growth, fishy odours and make it increasingly difficult to cook

3. UTILISATION - Coral trout has the potential of up to 95% yield. When you are paying a premium for this beautiful fish it is so important to not only economically recover as much as possible but ethically use all of what you take
