Been a while. Almost time for another I think. Throwback to this delicious Black Onyx Brisket smoked on the Big Joe. Rubbed with Holy Cow Rub and Brisket Rub. Fueled by some Premium Lump and Apricot wood chunks for a hint of fruity smoke. Smoked it for 9 hours, wrapped for 1 hour and let it rest for an hour - worked a treat โ˜บ๏ธ
