Attention Tambo - expressions of interest!!
Dickie's Mobile Butcher will be in Tambo mid October.
Although I will not have my own coldroom with me during this time, I am happy to do jobs at property's that have their own coldroom and tractor (only required if slaughtering cattle).

This weekends beast at Biddeston was a beautiful angus heifer dressing at out 358kg. The meat looked fantastic and tasted even better! Thanks to the client for a couple of delicious T-bones.

A nice yearling grain finished heifer killed and cut up for one of my Toowoomba clients.
It's been a busy few weeks, my cold room is already fully booked out until November! However if you have your own cold room on site feel free to get in touch as I may still be able to fit you in.
I am hoping to have another one ready before the Christmas rush!

A nice little steer for a customer over the weekend, dressing at 200kg.

This body is hung using the tenderstretch method. Tenderstretching helps improve the meat quality in the hind quarter by preventing muscle shortening during cooling.

Dickie’s Mobile Butcher is launching! Based in Toowoomba Queensland, we are servicing areas around the Southern and Darling downs.

After moving to Warwick to finish school, Dickie decided to make butchering a career by starting his school based apprenticeship and has been a fully qualified butcher since 2014. Working full time in the industry after school, Dickie edged forward and participated in the World Skills Australia competition.

World Skills Australia is a competition which aims to showcase the skills of vocational, technological and service-orientated industries and bring them together on the international stage. Competing for Australia in 2018, Dickie took out first place in retail butchery.

Moving away from Australia after his success, Dickie spent two years in the UK working in retail butchery and developing his skills and experience internationally.

On returning to Australia, Dickie has been gaining key experience working in an abattoir for just over 3 years in addition to his retail butchery work.

With over 10 years combined professional experience in retail butchery and abattoirs, Dickie has spent the last year performing farm kills and butchery for clients in the Darling Downs region spanning out to Goondiwindi.

Dickie is now offering his on farm butchering service for clients, being able to provide the full service of having their stock killed on site, with full preparation of all cuts, including mince, sausages and corned meat.

Growing up on a property north of Charleville, Dickie has a great appreciation for the paddock to plate experience, and understands the sense of achievement felt with being able to be a part of bringing that experience to his family and the community.
