Fresh delivery of organic, locally grown pumpkins 🧑‍🌾 $7.00p/kg

We will be making a hearty pumpkin soup 🥣

Ingredients
1 medium Kent pumpkin from us!
1 brown onion, chopped
3 cloves garlic
2 tbsp olive oil or butter
750 mL–1 L chicken or vegetable stock
½ cup cream or coconut cream (optional)
Salt + pepper
Optional:
* pinch nutmeg
* fresh ginger
* curry powder
* thyme

Method

1. Roast the pumpkin
Cut pumpkin into wedges.
Remove seeds.
Roast at 200°C for 40–50 mins until soft and caramelised.
2. Cook onion + garlic
In a pot, sauté onion in oil/butter for 5 mins.
Add garlic for 1 minute.
3. Blend
Scoop roasted pumpkin flesh into pot.
Add stock gradually.
Blend until smooth.
4. Finish
Stir through cream if using.
Season well with salt and pepper.
