Crispy Skin Longfin Eel with Garlic Butter & Lemon

Longfin eel has rich, firm flesh that is fantastic grilled or pan-fried. This recipe keeps it simple and lets the flavour of the eel do the talking.

Serves: 4

Ingredients

* 1kg Longfin eel fillets, cut into portions
* 2 tbsp olive oil
* Salt and cracked black pepper
* 50g butter
* 3 cloves garlic, finely chopped
* Juice of 1 lemon
* 2 tbsp chopped parsley

Method

1. Prepare the eel
* Pat the eel dry with paper towel.
* Season generously with salt and pepper.
2. Cook the eel
* Heat olive oil in a large frying pan over medium-high heat.
* Place the eel skin-side down and cook for 4–5 minutes until the skin becomes crispy and golden.
* Turn and cook for a further 2–3 minutes until the flesh is just cooked through.
3. Make the garlic butter
* Lower the heat and add the butter and garlic to the pan.
* Cook for 1 minute until fragrant.
* Add the lemon juice and swirl the pan.
4. Finish
* Spoon the garlic butter over the eel.
* Sprinkle with fresh parsley.

Serve With

* Creamy mashed potato
* Roasted vegetables
* Fresh garden salad
* Crusty bread to soak up the garlic butter
