Nothing says winter quite like a comforting pie.

This season, we've created something truly special, the Stone Axe Winter Pie, a rich and indulgent celebration of slow cooking, craftsmanship and exceptional Australian beef.

Tender Stone Axe Beef Shin is slowly braised with carrots, onion, celery, pumpkin and fennel, enriched with red wine, garlic and fragrant Herbes de Provence. The filling is then encased in a handmade French pâté brisée, topped with golden pommes duchesse, and baked until beautifully crisp.

Available in two sizes, there's one to gather the family around the table and another perfectly suited to a cosy meal for one.

Handcrafted in the Victor Churchill kitchen, each pie is prepared with the care, passion and attention to detail that defines everything we do. Simply reheat, serve and enjoy.

As we continue to celebrate 150 years of Victor Churchill, we are proud to unveil another extraordinary expression of craftsmanship and indulgence.

L’Oreille de la Belle Aurore is among the grandest expressions of French charcuterie. Far more than a traditional pâté en croûte, it is revered for its remarkable scale, intricate composition and longstanding place at the centre of celebrations, banquets and culinary ceremony.

At its heart is a carefully composed mosaic of duck, chicken, turkey, venison, squab, pork, foie gras and truffle. The meats are marinated in Armagnac, Cognac and nutmeg, then seasoned and bound with a rich farce of pork, truffle, pistachio and cranberry. This filling is then encased in a classic French pâté brisée, before being baked to a beautiful golden finish.

Once baked, the natural cavities within the pâté are filled with a port wine aspic. As it cools, the jelly sets to preserve moisture within the filling while adding a delicate sheen and depth of flavour.

The result is a spectacular showcase of classical French craftsmanship. Rich, intricate and deeply considered.
