As an egg ages, the liquid inside slightly evaporates, and an air cell forms at the large end. The older the egg, the more air seeps in, making it more buoyant.
How to Do It:
Grab a deep bowl or a tall glass, fill it with cold water, and gently drop your egg in. Here is how to read the results:
-The Fresh Find: If the egg sinks and lies flat on its side at the bottom, it is at peak freshness. These are perfect for poaching or frying!
-The “Use it Soon” Egg: If the egg stands upright on one end but stays at the bottom, it is losing its youth but is still perfectly safe to eat. These are actually the best eggs for hard-boiling, as the slightly larger air pocket makes them much easier to peel.
-The Floater: If the egg bobs to the surface, it’s time to toss it. This means the air bubble has grown large enough to make the egg float, signalling it is likely past its prime.
