Meet Leevi from Fresh Acres ๐Ÿซ˜

We love knowing the people behind the foods we bring to you, and today weโ€™re introducing you to Leevi from Fresh Acres, our Canadian Bean-growing partner.

Leevi is a first-generation farmer who fell in love with the idea of farming and decided to make it happen! What started with a passion for growing food has grown into a farm dedicated to growing the beans you love ๐Ÿšœ

The farm is focused exclusively on food crops for human consumption, with no feed crops. From the fields to processing, Fresh Acres' Beans are 100% Canadian grown and processed ๐Ÿ‡จ๐Ÿ‡ฆ

We had the chance to visit Leevi at Fresh Acres this summer and spent some time seeing the farm for ourselves. Thereโ€™s something pretty special about walking through the fields, seeing where the food we work with actually comes from, and getting to know the people behind it all.

Leeviโ€™s story is a great reminder that farming doesnโ€™t always have to be something passed down through generations. Sometimes, it starts with someone simply falling in love with the idea of growing food and deciding to give it a go.
Weโ€™re very happy to have Fresh Acres as one of our farmer partners and to be able to share their Canadian-grown Beans with you. ๐ŸŒฑ๐Ÿ’š

Tiny Tales from the Fields: Mangoes ๐Ÿฅญ

Itโ€™s been a tough season for Mangoes in Mexico. This yearโ€™s crop is expected to be only around 50% of an average season.

With other growing regions also facing a significant crop shortfall, demand for Mexican Mangoes has increased as global supply gets tighter.

So, what happened? ๐ŸŒฑ

The trees simply didnโ€™t flower as much as needed. Warm winter temperatures meant the trees missed the cold hours needed for a strong bloom. Then, erratic spring weather and drought further affected the harvest.

The result? Fewer mangoes, smaller fruit, and a season that has fallen well short of the original production forecasts. Thankfully, despite the reduced crop, fruit quality has remained relatively stable ๐Ÿฅญ๐Ÿ’š

๐Ÿ“ฆ With quantities expected to be limited this year, keep Mangoes on your list and make sure you get your share of this yearโ€™s crop!

Add a flavourful twist to your next probiotic brew that's perfect for summer sipping.

What is Kombucha and Jun Tea? Kombucha is a fermented, lightly effervescent, sweetened black tea drink. Jun Tea is the green tea variant made with honey and like kombucha, you need a scoby (symbiotic culture of bacteria and yeast) to brew jun.

This sweet recipe infuses with the rich flavours of our Dried Fruits during a second ferment. For an extra special burst of flavour, try our favourite infusions using Crystallized Ginger Rounds, Mango, or Pineapple-

Mix๐Ÿ and match๐Ÿฅญ to find your favourite and donโ€™t forget to share your creations with us ๐Ÿ˜

This Recipe is an infusion blend for those already brewing their own Kombucha or Jun Tea.

INFUSED KOMBUCHA & JUN TEA
Makes about 750ml - 1 litre

Ingredients:

๐Ÿ’š 1-3 slices or about 1/4 cup diced Rancho Vignola Dried Fruits with no preservatives or additives.
- The more Dried Fruit you use the more fruity your final drink will be! Yumm ๐Ÿฅฐ
- Some of our favourites Dried Fruits are; Crystallized Ginger Rounds, Mango, Pineapple, Peaches, and Orange Slices.
๐Ÿ’š 750 ml - 1 litre of kombucha or jun tea thatโ€™s finished its 1st ferment.

1. Remove the scoby from your brew and add your Dried Fruit of choice.
2. Ferment for another 24 โ€“ 48 hours, or until you think it tastes just right.
3. Then refrigerate your now fruity kombucha or jun tea!

๐Ÿ‘‰ Our Tips for a tasty Infusion

๐Ÿ’ก You can strain the fruit before refrigerating, or as you serve.

๐Ÿ’ก REMEMBER your Dried Fruit will swell in size once itโ€™s added to your brew, so make sure itโ€™s cut small enough to remove from your container once it rehydrates or use a wide mouth jar.

๐Ÿ’ก Most kinds of Dried Fruits will work, but itโ€™s best to use varieties without any added ingredients, sugar being the only exception.

๐Ÿšฐ Ever wondered why some recipes call for pre-soaking the Nuts before use?

Soaking softens Nuts, giving them a gentler, creamier texture perfect for Desserts, Nut Mylks, Sauces, Spreads, and more.

As Nuts contain phytates and enzyme inhibitors, some people also find that pre-soaking eases their digestive discomfort and makes snacking more enjoyable ๐ŸŒธ

How to Soak Nuts: ๐Ÿฅฃ

๐Ÿ’ง As a general guide, use 1 cup of Nuts to 2โ€“3 cups of fresh cool water and soak for 4โ€“8 hours, or overnight.

โฐ Soaking times vary slightly depending on the type of Nut and how you plan to use them. A softer Nut like Cashew will need less time then Almonds for example.

๐Ÿ’ก If soaking overnight, refrigerating is sensible, particularly in summer or in a warm kitchen.

๐Ÿง‚ If you're soaking for digestion, add about ยฝ teaspoon of salt per cup of Nuts to the soaking water.

๐Ÿšฟ Drain the salt water and rinse well before using, or optionally dry them again after soaking to restore their crunch.

Summer is here, and itโ€™s the perfect time to double-check how you are storing your favourite foods. Warmer temperatures can shorten shelf life, change textures, and affect flavour. Here are some great tips to keep your foods fresh for longer โ˜€๏ธ

๐Ÿฅถ Raw Nuts and Seeds
Store raw Nuts and Seeds in the freezer whenever possible. Their natural oils are delicate, and higher temerpatures can make them go rancid quickly. If your freezer is full, the fridge is the next best option. Always use clean, airtight containers to prevent moisture, odour, or flavour transfer.

๐Ÿง‚ Roasted or Salted Nuts & Seeds
These are more stable than raw, so a cool pantry or basement is just fine. Make sure the space stays dry and out of direct sunlight. Warm cupboards or humid kitchens can cause texture loss and stale flavours.

๐Ÿ‘ Dried Fruits
Dried Fruit stores well in the fridge, especially if you live somewhere hot or humid. If you are short on fridge space, a cool pantry or basement will work great too. Some Dried Fruits can be frozen, but keep in mind that freezing and thawing may slightly change the texture.

๐Ÿงผ General Storage Tips
No matter where you store them, always transfer your Rancho Vignola foods into clean, airtight containers. This helps protect against pests, moisture, and cross-flavouring. Glass jars, BPA-free plastic, or stainless steel sealed containers are good choices.
