In Canada we call the lean, round pork loin cut back bacon (or peameal when corn‑meal coated). The USDA, however, defines bacon as pork belly — so our back bacon gets classified as ham south of the 49th.

That little label difference can surprise travelers and shuffle menus, but it doesn’t change the taste. Whether you prefer the lean, meaty back bacon we love in the Cariboo or the streaky, crispy belly bacon many Americans expect, both have a place at the breakfast table.
