🍓Strawberry Rhubarb Mocktail🍓

For the Syrup:
🍓½ cup rhubarb
🍓½ cup strawberries
🍓½ cup monkfruit sweetener or sugar
🍓½ water
Instructions for the syrup:

Add all ingredients to a small saucepan.
Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 10-12 minutes until the fruit softens.
Lightly mash, then strain through a fine mesh sieve. Cool before using.

For the Drink:
🍓1-2 oz strawberry rhubarb syrup
🍋1 oz lemon juice
Top with non-alcoholic prosecco, kombucha, or ginger beer, lemon or lime sparkling water
