Today’s Featured Cheese: Gorgonzola Dolce
This Gorgonzola is produced by the Leonardi family in the town of Cameri in the hilly Italian region of Piemonte, and has a gentle, slightly sweet, and milky flavor with just a hint of tang. The texture is ultra-creamy, almost spreadable, with delicate blue veining that lends a subtle earthiness without overpowering the palate. It pairs very well with honey; serve it on a cheese board alongside pears, figs, and walnuts.
