As we do each spring we ask are neighbour if they have any 18 month old cattle available for sale, which we feed through the spring, summer and fall for killing in late fall. We usually purchase some mostly Angus steers in May or early June each year. The beef is corn & grain fed, and on good pasture from May or early June to about mid-November. They are nicely finished by early to mid-November wh
en we send them to the abattoir. The quarters are close to the same weight each year, (usually about 200 lbs per split quarter) and hang for two weeks before the cutting and wrapping. Delivery approximately early to mid- December. The price per pound is determined in October each year and it will be competitively priced at less than local butcher prices for similar split quarters of beef. The cost includes kill, cut & wrap and delivery. Each spring I contact customers from previous years in advance so as to be proactive, and thus be potentially reliably accurate at matching the number of animals to be raised to the number of customers wanting beef in the fall. If you are confident that you would be interested in purchasing beef please let us know, and also the amount of beef such as a quarter, half or whole animal. A split quarter of beef may seem like a lot of beef, however it is economical in the long run, and once it is frozen we find it keeps well for a year or so in the freezer.
