Chicken chili! I’m always looking for simple meals that I can large batch and eat throughout the week. This white chicken chili with cannellini beans is so flavourful, healthy and delicious. Ask our butchers to fresh grind some chicken for you….here I used free range chicken…half breast and half thighs.

I never follow a recipe, but exact amounts are not necessary! I’ll give a rough idea here of what I did…

4 pounds fresh ground free range chicken (1/2 breast 1/2 thighs)
Olive oil
2 onions, diced
4 shallots, diced
5 cloves garlic, diced
4 leeks, diced
4 stalks of celery, diced
1 large carrot, diced
10 white mushrooms, diced
1 jalapeño, diced
1 large zucchini, chopped
1 red pepper, chopped
I head of kale, chopped
3 cans of Bombini Cannellini beans
2 cans of Bombini Red Kidney beans
5 cups chicken broth
1/4 cup white wine (optional)
Calabrian hot chili peppers
Salt & pepper to taste

Sauté onion, shallots, garlic and leeks until soft. Add all other veggies and sauté until cooked. Add 1/4 cup white wine and cook for 5 more minutes. Remove almost all vegetables. I like to leave some in the pain for flavour. Add the ground chicken and cook on medium-high until almost cooked through while using a wooden spoon or spatula to break while cooking. Add the vegetables back to the pan. Then add the beans and enough chicken broth to reach the consistency you’re looking for.

Serve hot with sliced avocado, sharp cheddar cheese, green onion, sour cream and fresh baked polenta cornbread.
