Here's a little BBQ trick our team swears by: Don't wait until your steak hits your final temperature before taking it off the grill.

Even after it's off the grill, your steak keeps cooking as the heat moves toward the centre. That's why it's best to remove it just before it reaches your preferred doneness.

Keep this in mind:
• Medium Rare (130°F): Remove at 125–128°F
• Medium (140°F): Remove at 135–138°F

Finish with a few minutes of rest, then slice and enjoy. It's a small step that makes a big difference.
