Smits & Co.w Farm Cheese Offering a variety of fine gouda cheeses made on the farm! Smits & Co.w is a small family owned and operated farm and cheese making business.

We take the milk from our mixed herd of Holstein and Brown Swiss cows and use a traditional method to produce an excellent gouda style cheese. We also process goat gouda using milk from a local goat herd. Our selection includes mild, medium and aged plain as well as flavours such as cracked black pepper, onion, onion & garlic, cumin, fenugreek, stinging nettle, chilli pepper, Italian and Greek spi

ced. Tzatziki, Garlic, Caraway, Mustard, Stinging Nettle, Smoked Gouda, Forest blend (wild mushrooms and spring onions) and Truffle. In our goat Gouda selection, we have plain mild, medium and aged as well as goat fenugreek, goat black pepper and smoked goat Gouda

We have a delicious Emmental, water Buffalo Mozzarella and goat Feta

We also have delicious yogurt, regular and Greek and Cheese curds
All our cheese is made on site, cows milk products are made from our own milk; and we bring in the goat milk and water Buffalo milk from local farms. We use no chemicals, colours or preservatives in our cheeses or other products made on site. (Yogurt, curds)
Our smoked cheeses are smoked in a smoker using cold, natural wood smoke; not injected with liquid smoke. Our cheeses are aged on pine boards. Come visit our unique little store on the farm and enjoy old fashioned hospitality.

Today someone asked if we sell “spiced cheese”. This is what the Dutch people call Cumin cheese, or “komijnekaas”. Its been very popular in The Netherlands for very many years. In fact the Dutch began adding cumin to their cheese as early as the 17th century! Cumin seeds are added to the cheese as it’s being made, and this lends a glorious flavour. As the cheese ages, the flavours become more rich and pronounced. Have a few slices on warm buttered toast, grate it into a pasta, have it cubed with a glass of wine. It’s so delicious 😋

Here we see a fresh batch of plain Gouda, just out of the brine vat, and drying before being coated. After being coated with a special coating that still allows the cheese to breathe, they will be put up on the pine shelves to ripen. The first weeks they are turned over every day to ensure even moisture distribution and to prevent the wheels from deforming or flattening on one side. They are also wiped down regularly with warm salt water to prevent unwanted mold. In about 2 months, we can cut the wheels and serve them to you!

Something very exciting happening on our farm! With the help of an owl expert, who installed an owl friendly structure way up in the beams, 3 years ago, an owl couple moved into our old barn! We were thrilled to notice their arrival, since we have always loved owls and hoped some would move into our old barn. The first year they produced a family of 5 owlets; of which one didn’t survive. The other 4 did, and it was so exciting to see them begin to fly, and sit in the old chestnut tree, talking to each other in their high pitched little screeches.
These are Barn owls. They have extremely good night vision, and extra wide wingspan which allows them to fly very slowly and soundlessly. This combo makes them exceptionally good hunters, and they take out a lot of rodents for us. Rodents are a problem on every farm because of the abundance of food.
This year the owls have produced a family of 6! It’s a true privilege to have these beautiful birds calling our farm “Home!” ❤️

“Smits & Cow” Farm Cheese is a small family run business in the heart of the farming community in Chilliwack, BC. Ron and Stephanie Smits are the owners, farmers and cheese makers; along with their daughters and son in law. The herd consists mainly of Holstein cows, with a number of beautiful Brown Swiss which enrich the loveliness of the milk with their contribution of high butter fat. The cows spend most of the year outside on the pasture, and are inside the spacious loafing barn area in the late fall until early spring, when the weather is too cold and wet to be outside.
All our milk is pasteurized, but not homogenized. This means that the cream will still separate. People ask us periodically if we would sell them raw milk, but it is illegal to sell raw milk in Canada so we do not; and cannot make exceptions.
All products made on our farm are produced without preservatives, additives or chemicals. Our main cheese is Gouda, reflecting the family’s Dutch heritage. We also make Emmental, feta, and Quark; which is like cream cheese. We bring in Goats milk from a local dairy and make Goat Gouda and Feta. Water buffalo milk is brought in from Aldergrove to make delicious Gouda, Mozarella and Feta.
We make regular yogurt, Greek yogurt, Quark, cheese curds, and a delicious dessert custard called “Vla” in vanilla and chocolate flavours. We have a nice selection of Dutch groceries in the shop, as well as delicious sausage from “Savoury Sausage”, ground beef, organic chicken, and Dutch treats such as krokets and bitterballen.
Outside on the walkway is our extremely popular Milk Vending Machine! The milk is full fat, pasteurized, no additives. We urge you please to use GLASS BOTTLES; not plastic. Plastic cannot be sterilized properly and milk will not stay as fresh in it. We do sell glass bottles at the shop; they are 1.87 liter size for $5.50; and cost $5 to fill up. The bottles and lids can be cleaned and reused.
