It’s National Cheese Day! What better way to celebrate than with a freshly cracked wheel of Parmigano Reggiano
Made in the Emilia-Romagna region of northern Italy for close to 1000 years, every wheel starts with the same three ingredients: milk, salt, and rennet. Tradition, craft and time transform them into something magical.
On a cheeseboard, pasta dish, salad, or frankly straight off the cutting board (or if you are lucky right off the wheel), every time we taste it, we are enchanted.
Of all days today seems like a pretty good excuse to enjoy a piece.
