It seemed like a good idea at the time!
Sitting in the Milan airport after a wonderfully productive few days, meeting with producers of exceptional olive oil and a family-run balsamic vinegar company, we enjoyed one last spritz before leaving Italy and shared The Classic—fresh mozzarella with tomato, basil, olives, and a generous drizzle of olive oil and balsamic vinegar.
Halfway through lunch, one of us looked up and said, "We need a cheese cart."
A few weeks later, we found ourselves driving across Vancouver Island to pick one up.
We wanted to recreate that simple but unforgettable Italian experience here in the Comox Valley, using the incredible local ingredients we already have at our fingertips: fresh mozzarella, vine-ripened tomatoes, fragrant basil, and beautiful seasonal produce, paired with the authentic Italian olive oils and deeply flavourful balsamic vinegars we had fallen in love with.
After months of planning, a little renovating, plenty of paperwork, and adding our own Laliberté touch, the Laliberté Cheese Chariot is ready to roll.
This summer you'll find us at Downtown Courtenay's Market Day, Nautical Days in Comox, popping up Beaufort Winery , and other local events, serving fresh mozzarella plates and other gourmet creations that celebrate the best of the Comox Valley, with a little taste of Italy in every bite.
