Tabbouleh is a fresh and delicious meal, full of protein and a great way to enjoy the fresh veggies and herbs this season brings. (And it makes a great leftover lunch for the busy fall season!)

This recipe is from Alyssa at Simply Quinoa... and it is simple!

Ingredients
2 cups cooked quinoa
1 cup chopped tomatoes
1 cup chopped cucumbers
1 cup chopped parsley
2 tablespoons chopped fresh mint
2 tablespoons olive oil
2 tablespoons lemon juice
Salt + Pepper to taste - chili salt if you can find it*

Instructions
Add cooled quinoa, tomatoes, cucumbers and fresh herbs into a large bowl.
In a separate bowl, whisk together oil, lemon, salt and pepper. Pour dressing over salad ingredients and toss to combine.
Serve immediately or add in your favorite proteins.
Enjoy!

Notes
If you can’t find the spicy salt, feel free to add a pinch or too of crushed red pepper if you want some heat.

This change of season can bring a lot of financial stress, but it doesn’t have to!

No one needs the newest and best style or colour of clothing, lunch containers, or school supplies. There are literally millions of them out there already, and some of them are probably in your house! If you can’t find any, ask around or pop into your local thrift/consignment store before buying new.

The best planet-friendly purchase is nothing at all!

And if you do find you need some new things, look for items that are built to last, with non-toxic materials, and made ethically if possible. We have some great options we’ll be sharing soon. 😁

Of course, you could make a simple chia pudding, but for anyone looking to up your game... here you go!

This Blueberry Pie Chia Pudding recipe from Katelyn at With Sweet Honey is the perfect make-ahead breakfast. Made with creamy coconut milk, naturally sweetened with maple syrup and honey, and topped with a simple blueberry compote and nutty crumble.

INGREDIENTS:
Pudding
1 can light unsweetened coconut milk (one 13.5 fl oz can)
½ cup chia seeds
2 tablespoon maple syrup
1 teaspoon vanilla extract

Blueberry Compote
2 cups fresh or frozen blueberries
1 ½ tablespoon fresh lemon juice
3 tablespoon honey
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch of sea salt
Crumble Topping
⅓ cup chopped pecans
⅓ cup sliced almonds
¼ cup gluten free old fashioned oats
2 teaspoon honey
1 teaspoon ground cinnamon
3 whole medjool dates (pitted)
¼ teaspoon vanilla extract

INSTRUCTIONS
Make the pudding: Add coconut milk, chia seeds, maple syrup and vanilla extract to a bowl. Stir to combine. Cover and refrigerate overnight.

Make the blueberry compote: Add the blueberries, lemon juice, and honey to a small saucepan. Heat over medium-high heat until bubbling. Stir and mash the fruit with a spoon. Once bubbling, continue to cook over medium-low heat for about 10 minutes. Stirring and mashing the fruit as it cooks. Remove from heat and add the ground cinnamon, ground nutmeg and sea salt. Stir to combine. Set aside in the refrigerator to cool off.

Make the crumble topping: To a blender or food processor, add the pecans, almonds, oats, honey, ground cinnamon, dates and vanilla. Blend for 30 seconds until crumble forms.

Assemble the pudding parfait: Once the compote is cooled, take it out of the refrigerator and divide into four serving dishes. Next, add the pudding that soaked overnight. Then finally top with the nut crumble topping. Serve immediately or cover and store in the refrigerator for up to 3-4 days.
