A little update 💛

September 27, 2026 will be the last day to find my macarons, croissants, pains au chocolat and almond croissants at Ethos Café.

It has been such a wonderful opportunity to work with Daphnée and Joel over the years. Their support gave me the chance to develop my creativity, grow my passion for baking and share so many of my creations with the community. I’m truly grateful to them, and to everyone who has enjoyed my pastries at Ethos.

It is now time for me to bring this chapter to a close, but this is not goodbye to Pauline’s French Macarons! I will share more information soon about what is coming next, including Christmas markets and holiday desserts.

Wedding cake delivery with a little extra adventure! 🏔️

A windstorm closed the gondola, delaying our trip up the mountain by an hour. But when we finally arrived at Eagle’s Eye Restaurant, we found the sun shining at the top!

A beautiful mountain-inspired cake, set against one of the most spectacular views in Golden. Definitely worth the wait. 🤍
