Meet the vendor: Polestar Hearth
This awesome local business handcrafts naturally-leavened sourdough breads from organic, Canadian grains. Their breads are made from the simplest ingredients: flour, water, sourdough culture and sea salt. Polestar Hearth began as a cottage industry making bread the slow, old-fashioned way: baked in a brick oven by Guelph’s own Blair Cameron.
After nine years of backyard baking, the business moved to a street-front shop, and now employs a team of a dozen craftspeople who care about food, community and really good bread. Every Thursday and Saturday, four amazing sourdough varieties are available at Rowe Farms: spelt, sesame whole wheat, super seed and country loaf.
