Roasted Veggie Summer Salad - $22.27
Let local produce shine in a roasted salad. Abundant Acres romaine lettuce and zucchini, Boulangerie La Vendéenne olive sourdough loaf, local red bell peppers and nectarines.

Chop and roast zucchini, peppers, and nectarines. Turn your olive bread into crispy croutons by cutting it in chunks, drizzling with olive oil, and baking for 10-15 minutes. Combine everything over fresh romaine and top with your favourite vinaigrette dressing! If you’re feeling fancy, add some goat cheese and walnuts on top, too ;)

HERBS 101: STINGING NETTLE

If you haven’t encountered stinging nettle before, pay attention to its name: we sell it in closed plastic bags so that nobody gets stung! Nettle leaves are covered in tiny stinging hairs that will irritate skin, but once you cook, steam, or blanch them, they’re totally harmless. You can empty the bag straight into your pot, or use gloves to handle them. Nettle is rich in vitamins and antioxidants, and can be used to make a fantastic herbal tea, or added to pesto, soup, quiche, risotto, or many dishes similarly to how you would use other hearty greens — just not completely raw.

Have you met the Woodstock Tomato? 🍅 This is a fantastic bicolour tomato variety: it’s not unripe, it’s actually meant to be both green and red/orange when it’s at its tastiest! It also has a stunning interior when you slice it open :)
The woodstock is a favourite on the farm, and packs a ton of flavour. We’re worried that costumers are missing out on them because they look a liiiittle wonky, and you might think they’re unripe, or just unfamiliar.
Next time you’re in, consider trying some woodstock tomatoes!!

During tomato season there’s nothing better than a simple sandwich: let the summery heirloom shine! Abundant Acres heirloom tomato and arugula, Boulangerie La Vendéenne froment sourdough loaf, and Rancher Acres goat cheese.

Stack your sourdough with goat cheese, arugula, and a fat slice of tomato. Don’t forget to top it with salt— this will help draw out the water and result in a more intense tomato flavour. Delicious!

HERBS 101 - INDIAN LEMONGRASS 🌱

Indian lemongrass is a perennial grass native to India and Southern Asia, and is used in cooking for its zesty, citrusy flavour. It’s fantastic in soups, stir-fries, marinades, and curries. To use it trim off the root end, peel away the tough outer layers, and cook with the soft inner stalk. Grate it, slice it, or chop it into batons. Lemongrass flavour develops more the longer it cooks, so for a punchy lemon flavour cook it low and slow, or add it at the end for a more delicate taste. It can also be used in teas and drinks!

Mexican Corn Salad - $21.51
It’s corn season! Enjoy this salad on its own, with tortilla chips, or as a side at your weekend BBQ. This recipe includes 6 ears of corn, Abundant Acres green onions and parsley (or cilantro), 1 red onion, 1 red bell pepper, 1 jalapeño pepper, and The Holmstead feta cheese.

Cut the corn off the cobs and char in a pan over high heat. Let it cool a bit in a bowl, then add chopped green onion, parsley, red onion, bell pepper, jalapeño, and add lime juice, cumin, smoked paprika, salt&pepper to taste, and a few spoonfuls of sour cream ( or sub greek yogurt or mayonnaise). Mix together and crumble feta over top. Enjoy!

MARKET MEALS EPISODE 4 🍅🧄🥖

This recipe is roasted Abundant Acres cherry tomatoes, garlic, and basil, with The Holmstead feta and shallot, served with Boulangerie La Vendéenne fougasse. Total: $22.75

Add tomatoes, olive oil, thinly sliced garlic and shallots, and salt and pepper to taste. Toss, then place in a baking dish and add feta. Roast for 20 minutes at 400, then transfer to top rack and broil for a minute or two. When tomatoes are blistered, remove from heat, then add fresh basil. Eat and mop up with bread. (You can also serve this on pasta, as per TikTok 🤗)
