A simple yet extremely addictive recipe produces 2 end products;
1 - lacto tomato water
This liquid gold is a perfect substitute for cooking wine, or a pickling brine...for example.
2 - lacto tomato pulp
This incredible transformation of tomatoes leaves you with a pulp that you will want to spread on toast, it satisfies every taste bud. You can also add a little to a tomato sauce or stir fry to add a bright umami.

One thing I'm noticing here in Portugal, especially in small towns without the tourist population of Lisbon or Porto, is that it is not common to order a glass of wine. Moat places have prices for full bottles and maybe a house wine that you can get 1L or 500mls of. This place, Taberna do Quinzena in Santarem serves there house wine out of this giant wooden barrel. Smallest amount you can order in 500ml...for €2.50. I kinda love this country.
