My broer en sy gesin het onlangs na Nanaimo in BC getrek. Hierdie blokkies is 'n baie gewilde blokkie daar.
Gelukkig kry mens al die bestanddele in Kanada en in Suid-Afrika. Lekker bak!!

Nanaimo blokkies

Maak 25 blokkies

Onderste laag:
100 g botter, by kamertemperatuur
50 g suiker
30 g kakao poeier
1 groot eier, geklits
5 ml vanielje geursel
200 g marie koekies, fyngekrummel
60 g klapper
60 g pekaneute, fyngekap
Middel laag:
60 g botter
15 ml room/melk
30 ml vlapoeier
2,5 ml vanielje geursel
500 ml versiersuiker
Boonste laag:
100 g donker sjokolade
15 ml botter

Metode:
1. Voer ‘n 23cm x 23 cm bakplaat uit met bakpapier en spuit met kleefwerende kosspuit.
2. Smelt die botter en voeg die suiker en kakao poeier by. Meng goed.
3. Klits geleidelik die geklitste eier by. Klits totdat die mengsel begin verdik.
4. Verwyder van die hitte, en roer die vanielje geursel, koekies, klapper en pekanneute by.
5. Versprei die mengsel aan die onderkant van die voorbereide bakplaat.
6. Bedek met kleefplastiek en plaas in yskas vir ten minste 1 uur.
7. Middel laag: Klits die botter tot glad. Voeg melk, vlapoeier, geursel en versiersuiker by. Voeg nog melk by as die mengsel te dik is.
8. Smeer bo-oor die onderste laag. Bedek met kleefplastiek en laat weer in yskas hard word (1/2 uur tot 1 uur)
9. Boonste laag: Smelt die sjokolade saam met die botter.
10. Smeer oor die middelste laag en plaas in yskas tot net gestol.
11. Gebruik ‘n warm, skerp mes, en sny in blokkies.
12. Hou in yskas.

Hi all. I have been very quiet these past few months. Truth be told, it was a very busy few months, most importantly the fact that we immigrated to Canada, and have now been living here for 6 months.
I have been baking and preparing cooked dishes for my fellow South Africans also living here in Kelowna. I would like to expand to the rest of Canada at a later stage, but for now I am just trying to make my mark here.

Included is a recipe for my favorite fudge - hope you enjoy!!

The best fudge ever
Makes 30 squares
1 kg sugar
125 g butter
250 ml milk
25 ml golden syrup
2 ml salt
1 can condensed milk
5 ml vanilla essence
1. Spray a baking tray with cooking spray.
2. Put the sugar, butter, milk, syrup and salt in a heavy bottom pot.
3. Heat the mixture over a low heat until the sugar is dissolved – do not boil the mixture. Use a brush dipped in water to brush the sides of the pot to help prevent crystallization.
4. Bring mixture to boiling point and boil slowly for 5 minutes.
5. Add the condensed milk and stir until the mixture starts to boil again. Leave the mixture to slowly simmer for 20 – 30 minutes, until the mixture has a caramel-brown colour. If you have a sugar thermometer, you should boil it until 118°C.
6. Remove the pot from the heat and leave to cool for 7 minutes.
7. Add the essence and beat quickly until the mixture starts to thicken.
8. Transfer the mixture immediately to the prepared baking tray.
9. Leave to cool.
10. Cut the fudge in squares as soon as it starts to set.
11. Store in an airtight container.
