At Codfathers we often talk about our “House cut” products but what does that mean?
As fishmongers, our aim is to provide the best quality and variety seafood to you, and the best way to keep the quality of fresh fish is to keep it as intact as possible for as long as possible.
The skin and strucure of the fish acts like a natural shrink wrap but once you cut into the fish, it starts to dehydrate and loses quality around 10 times faster than as a whole fish.
That’s why we skin fish on request—rather than before we display it—and even go to the lengths of pulling out pin bones at the point of sale, all to keep that fish as fresh as possible for you.
House cutting also means we have more variety for you: we can steak or fillet, leave skin on for crispy skin frying, or skin off, we can even pouch cut or butterfly for baking and stuffing.
From a sustainability perspective, our house cut products ensure all of the fish is utilized including cheeks, collars, trim for our seafood mix packs, fishcakes and chowders, and bones for stock. And we compost any waste that’s left. That’s the Codfathers difference!
