What is the difference between chocolate chips and Callets?
The main difference is that Callebaut callets are high-fat, pure couverture chocolate discs made for melting and professional confectionery work, while Callebaut's bake-stable chips or drops contain less cocoa butter and special formulations to hold their shape in the oven.
I use the milk Callets to melt over top of my Christmas crack, I also use them for simple dipping chocolates or drizzling over top of other desserts. I use the white chocolate Callets to drizzle over top of my cherry pie cookies at Christmas time. To be honest, these are so creamy that if I’m going to grab a sweet treat, I’m going to grab a handful of Callets over chocolate chips any day! They are my absolute favorite.
