🍂 Butternut Squash is here: Sweet, Savoury & So Comforting
Butternut squash is one of those wonderfully versatile vegetables that can turn an ordinary meal into something cozy and delicious.
Think roasted squash: tossed with olive oil, salt, pepper and a little garlic, then roasted until the edges are caramelized and golden. The natural sweetness deepens beautifully in the oven.
Think soup: silky, creamy and comforting, with butternut squash as the star. Add onion, garlic, broth and a touch of warming spice, and you have a bowl that tastes like fall.
And there’s so much more you can do with it — mash it, add it to pasta or risotto, toss roasted cubes into salads, use it in curries, or simply serve it as a side dish.
🥣 Easy Butternut Squash Soup
Ingredients
* 1 medium butternut squash, peeled and cubed
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 tbsp olive oil
* 4 cups vegetable or chicken broth
* ½ tsp ground cumin
* ½ tsp cinnamon
* Salt and pepper, to taste
* ½ cup cream or coconut milk, optional
Method
1. Sauté the onion and garlic in olive oil until softened.
2. Add the squash, cumin, cinnamon, salt and pepper.
3. Pour in the broth and bring to a boil.
4. Reduce the heat and simmer for 20–25 minutes, until the squash is very tender.
5. Blend until smooth and creamy.
6. Stir in cream or coconut milk if desired.
7. Taste and adjust the seasoning.
Serve hot with crusty bread, toasted seeds or a drizzle of olive oil.
